Mediterranean Sliders

Perfect for:

Quick breakfast or lunch option that is easy to make and will have you feeling great

Ingredients:

  • 1 x Tomato
  • 2 x Bombella sesame or caraway crackers (larger slices)
  • 5 x pitted kalamata olives
  • Handful of baby spinach leaves
  • 25g feta cheese (we used vegan bio feta)
  • 1 tbsp sesame seeds
  • Salt and pepper

Method:

  • Place crackers on a plate and cover with baby spinach leaves
  • Cut tomato into thin slices and layer on top of each cracker
  • Dice kalamata olives into small pieces and spread evenly
  • Crumble and spread feta cheese
  • Finish by sprinkling sesame seeds and seasoning with salt and pepper
  • Optional: Add basil or pesto for extra freshness
