Perfect for:
Quick breakfast or lunch option that is easy to make and will have you feeling great
Ingredients:
- 1 x Tomato
- 2 x Bombella sesame or caraway crackers (larger slices)
- 5 x pitted kalamata olives
- Handful of baby spinach leaves
- 25g feta cheese (we used vegan bio feta)
- 1 tbsp sesame seeds
- Salt and pepper
Method:
- Place crackers on a plate and cover with baby spinach leaves
- Cut tomato into thin slices and layer on top of each cracker
- Dice kalamata olives into small pieces and spread evenly
- Crumble and spread feta cheese
- Finish by sprinkling sesame seeds and seasoning with salt and pepper
- Optional: Add basil or pesto for extra freshness
